This version of Minestrone is inspired by the famous Sardinian dish, once called, Cucina Povera and derived from the Blue Zones® recipes where people live to be 100 years old with vim & vigor. My Minestrone is a beautiful bean-heavy combination with various veggies, greens (kale, fennel), potatoes or gluten-free pasta, that is spice-infused, offering up a complete meal that leaves you feeling light, yet full and energetic!
